Golden Glow Tofu Scramble: A Nourishing & Fast Breakfast

Lately, my favorite breakfast has been a quick and delicious tofu scramble. You don’t have to be vegan or vegetarian to enjoy this high-protein, satisfying meal! It’s packed with flavor, takes minutes to make, and is perfect for a nourishing start to the day.

What makes this dish even better? The powerful combination of spices and ingredients that not only taste amazing but also support overall well-being. In Ayurveda, tofu is considered cooling and works well for Pitta dosha, balancing heat and intensity. It can also be great for Vata when paired with warming spices, making it a well-rounded choice for all constitutions. With the right mix of herbs and spices, this dish becomes a grounding, nourishing breakfast, especially in Kapha season when warming and stimulating ingredients like red pepper flakes and turmeric are beneficial.

Ingredients:

1 block organic sprouted tofu (pressed for crispiness, optional)

1 tbsp avocado oil

½ tsp dried thyme

½ tsp turmeric

¼ tsp black pepper

¼ tsp red pepper flakes (optional, great for Kapha season)

½ cup mushrooms (any variety, sliced)

2 scallions, chopped

1 cup spinach or kale

Salt to taste

Additional culinary herbs of your choice (oregano, basil, or parsley work well)

Method:

Heat the skillet – Warm a pan over medium heat and add avocado oil.

Bloom the spices – Add dried thyme, turmeric, black pepper, and red pepper flakes to the oil, stirring for a few seconds to release their aroma.

Sauté the mushrooms – Toss in the mushrooms and cook for about 2 minutes until they soften.

Add the tofu – Crumble the tofu into the pan and mix well, letting it absorb the flavors for about 1 minute.

Incorporate the greens – Stir in the spinach or kale, allowing it to wilt slightly (about 30 seconds).

Finish & serve – Adjust salt to taste, sprinkle with fresh herbs if desired, and enjoy!
